MEXICO CHIAPAS CESMACH is a Fair Trade and organic coffee from the Campesinos Ecológicos de la Sierra Madre de Chiapas coffee cooperative (CESMACH), which is located in the Chiapas region of Mexico.
CESMACH is involved in many environmental protection and social development projects in the area. As part of their Sustainable Coffee Project, they are planting new coffee trees, as well as citrus and other fruit-bearing trees. They have a Women's Project to teach leadership development and co-operative management to the women members and wives of members. The women are also working with organic gardens and domestic animals to diversify incomes and their families' nutrition.
Chiapas borders Guatemala and shares the same mountain range with Huehuetenango, one of the best coffee growing regions in Guatemala. It is known to be one of the safest states in Mexico and has a national cloud forest park: El Triunfo Biosphere Reserve with Quetzals and Horned Guans.
In the cup, this coffee has a medium body; light sweet acidity with a hint of chocolate fudge, toffee, vanilla, and nice nutty notes.
